Wired, and this is not negotiable
Bluetooth introduces latency — a delay of tens of milliseconds between the signal being sent and the sound arriving. For listening to music that is invisible. For playing an instrument it is fatal: the note arrives after the finger has moved on, and the player cannot coordinate their hands with what they hear.
This surprises people precisely because Bluetooth works so well for everything else, and a family that buys wireless headphones for a digital piano typically concludes the piano is faulty. It is not. Use a cable.
Closed-back, and why
Closed-back headphones have sealed cups; open-back ones have a perforated grille that lets sound pass in both directions.
For piano practice, closed-back is the right answer. Open-back headphones leak sound into the room, which defeats the point of practicing silently at eleven at night, and they let room noise in, which is distracting for a student trying to concentrate.
Open-back headphones do sound more spacious and natural, and that matters for listening rather than for practice.

Check the socket size
Most digital pianos use a 6.3 mm (quarter-inch) headphone jack rather than the 3.5 mm one on a phone. Nearly all studio headphones ship with an adapter; consumer headphones frequently do not.
An adapter costs very little, and discovering the need for one at eight in the evening is a wasted practice session. Check the listing or buy an adapter alongside.
Volume, and a word about hearing
Headphones make it easy to practice louder than anyone would tolerate from speakers, and a student doing an hour a day at high volume is accumulating real exposure.
Most digital pianos have a headphone volume control independent of the speaker level. Set it to a comfortable listening level rather than the loudest tolerable one, and check periodically that a child has not crept it upward. This is worth a conversation rather than an assumption.

Beyond the obvious benefit of silent practice, several parents describe a noticeable jump in concentration. A student on headphones hears only their own playing — mistakes are clearer, the room is quieter, and the instrument is closer.
It is a small effect and a real one, and it is worth knowing when deciding whether headphones are an accessory or part of the instrument. We would treat them as part of the instrument.
